Vegan for One - Day 3

I didn't follow the book for a few days because of my endo but I'm back on it today!

Day 3 - Potato & Lentil Bake


I used basil tofu instead of some of the mushrooms as I had run out. Real nice and wholesome!

Apricot Brown Betty


I cooked this for 20 mins instead of 30, and served with Vanilla Swedish Glacé. Delicious!

Cooking from Leah Leneman's Vegan Cooking for One Cookbook

I have a million cook books yet there are many I haven't cooked from yet. I have started cooking the week one recipes from the Vegan Cooking for One book so that I get into the habit of cooking more fresh foods.

Friday's dinner



The recipe is actually Millet Pilaf but Waitrose didn't sell millet so I substituted quinoa instead. Very nice and simple. I served this with organic tenderstem broccoli and tahini sauce.

Saturday's Dinner



Again, really nice and definitely different to my normal salads! Forgot to put the toasted walnuts in there though, grr!

March, April & May 13 Food Swap!

As you can tell, I haven't blogged in a while so I want to catch up with all the lovely pics of my past three food swaps.

Mar Food Swap '13



Ms Cupcake got me things for March!! So Exciting :) I also had a Ferrero Rocher cupcake that I had shared with my mum before getting the chance to take a snapshot.


This is what I picked out for Caroline's parcel; I like to add some cooking ingredients to the boxes I send out when I can :)

April Food Swap '13



I received my parcel from Rebecca nearly three weeks late.. took the excitement out of the food swap this month but hoping this was a one off. Shared the kale crisps with my sis as we're both a fan!


I sent a few of my favourite things to Abigail this month - tried and tested ;)

May Food Swap '13



Caroline got me some amazing stuff this month! The crisps were scoffed straight away and I have been snacking on the rest.. there's not much left now :)



I got Christina some luxury items for May's swap. Never tried the crisps before but I really, really want to. Will have to order double next time as I was so close to eating some of these things ;)

Feb '13 Vegan Food Swap

So far, all of the food swaps have been a little last minute for me; December and January I was crazy busy with work, and this month I have been moving house... Nevertheless I have managed very well to put something fun and interesting together each month :)


This month, Abigail hadn't requested any special instructions which makes it pretty easy! I put together a mini white chocolate Easter egg with white buttons, braised tofu, M & S sweet & salty popcorn, dairy-free fudge, mixed bean chilli and raspberry chilli herbal tea. All wrapped up in my Vegetarian Shoes shoe box :)


Debbie was fantastic and bought her things for me from a nice wholefood co-operative near to where she lives. She put in many things that I adore and hadn't had in a while so I was over the moon :) All things have now been eaten except for the bombay mix and fruit bar that I am trying to hold on to so I have something left! Very happy bunny :)

January's Vegan Food Swap

I am feeling so ditzy.. I can't believe I haven't wrote about my latest food swap yet!!


So this is what I sent Samantha who was starting the year healthily. I wanted to introduce her to one of my favourite things ever; genmaicha tea! It is a green tea which has a really nice popcorn taste; perfect for when you want something that tastes like a treat and is good for you :) Good thing that I provided the tea strainer as she had been meaning to get one for a while.. Lucky guess! Had to buy the mixed bean chilli for myself as it sounded too convenient.. and it was pretty tasty! Shame Simon Rimmer's other products contained milk..






I received a fab box from Mitsu (you can find her blog at www.tohappyvegans.com/wordpress/category/mitsus-blog/). What can I say, I hadn't tried anything that was in my parcel before :) And eating vegan cheese and onion crisps?? I haven't had anything like cheese and onion crisps since 2005 (they used to be my favourite flavour). The marshmallows were lush too, some went into a deluxe hot chocolate... the caramel laces got me through a busy and stressful time at work... the chocolate wafers only lasted a couple of days because they were so good (with help from the bf)... the almond puddings were a fab snack for work... and I'm holding on to the 'caviar' and jelly so I have something to look forward to :) Very, very pleased!
